Lost & Found
2021
They say hurt people hurt people. Sucks for you if you met me in 2021. The year I completely lost myself, but I found solace in cocktail creation. This breakup sparked my cocktail journey, keeping me sane alongside great friends who shone some light during dark days.
The creation of this drink mirrors this stage of the breakup: a vague plan, adjusting as I go. Building recipes around black and white sesame. Despite the lengthy process, the result turned out better than I expected: a simple design with complex flavors. As the frozen dark side melts, the drink tastes great but looks hella ugly. Cheers.
Recipe:
Dark side: Black Sesame + Purple Rice + Water
This is a dessert I had in Taiwan, 黑芝麻糊. Once you grind the toasted sesame seeds with purple rice you then add water and boil them, the color will darken over time. Then you pour it into a tilted glass and leave it in the freezer overnight.
- Purple Rice 42g
- Black Sesame 37.5g
- Water 300g
- Sugar 2 tbsp
Light side: White Sesame, Soy Milk, Rice Pudding, Almond Extract, Lychee, Sake
It’s a blend and mix of things without clear recipes lol kinda adjust as I go but I love how refreshing and light this turned out.
Here’s a rough estimate
Add white sesame mix 1 oz, Canned Lychee 2oz, Sake 1oz then shake with some white rice for color correction (or it would be kinda beige)
- White sesame 10g
- Soy milk 30g
- Rice Pudding 15g
- Almond Extra 2 bar spoon
(Blend this out, I only poured 1 oz from this mix)
Black Sesame with salty egg yolk cookie
- Black Sesame 42g
- Honey 8g
- 1/5 egg
- I salty egg yolk
Bake at 250F for 25min then add edible gold for finishing touch
This took me 90min from start to finish to make this but was fun talking to myself reliving some old memories also enjoying incorporating tons of ingredients I ate growing up.
