Don’t look at me with those hot rodent eyes. This is my take on a hot, ugly, and irresistibly delicious drink. Despite running into multiple issues during this recording, like running out of SD card space and the camera losing focus most of the time (it locked in on those eyes), I really enjoyed making this! Last, a tribute to my favorite rodent man. Who doesn’t love Sid?

Recipe:
(base)
- Sake 2oz
- Coconut water 1.5oz
- 1 Spoonful of coconut cream

(foam)
- Black sesame 2 TBSP
- Taro steamed, add water then finely grind 2oz
- Heavy cream 0.5oz
- Sugar 2TBSP
- Milk 1oz
- Ube extract 2 drops
- Egg white 2oz
* this is an estimate, I mostly eye ball to adjust the color and consistency
Pour the mix in whipper charge with N2O.
Eyes are made with gum paste and colored the eyes using syrup base then sprinkle black sesame over it
